A part of Perugia’s province is close to Toscany and for this reason the local gastronomy was contaminated by the Tuscan one. We can find this similarity in toasted bread preparation, dressed with different kind of sauces: game, liver patè, pork cold cuts, dry sausages and capocollo called “Scalmarita”.

Moreover, pasta generally is dressed with strong taste sauces like the goose one and the soups are prepared with different kind of legumes like “hummus and quadrucci soup” or “cappelletti in broth”.

With regard to typical Perugian cakes, we can find “Crostini Briachi” with chocolate, almonds and alchermes or rhum and “Torcolo” a ring shaped cake made of flour, sugar, milk, butter, eggs, anise, pieces of candied fruit and raisin.
