Umbrian cooking’s features refer  to Middle Age and Roman time.

Umbria, situated between mountains, preserved ancient cooking techniques and dishes, for example grilled and spitroasted cooking, typical of Middle Age period when people used to cook grilled meat in big chimneys .

Today lots of dishes use this cooking techniques for example the "Palombacci”, wild pigeons cooked on a spit with a sauce made of red wine, bacon or ham, capers, vinegar, oil, anchovies, onions, cloves,  juniper berries, sage and lemon juice.
