Umbrian land is generous of products and its cooking is poor and rich in tastes at the same time. 
Among all Umbrian products, the truffle is one of the most valuable. Perugian cooking is simple but very tasty and it is possible to check it in meat cooking that generally is grilled or roasted with a lot of aromas to exalt its quality.
This is the case of “Palombacci alla Perugina” dressed inside and outside with salt and pepper and wrapped in ham slices.
