TodiCastle Organic Farm
TodiCastle Estate grants its guests the “authentic Italian country holiday” and offers them a wide range of opportunities: they can stay into the historic castle or into villas, they can taste typical products at the Umbria Grill restaurant, they can attend wine and food tasting or cooking courses.
The TodiCastle Organic Farm produces high quality organic food. Animals are breed in the wild and vegetable, oil and wine are yielded respecting old traditions. During their stay, guests have the opportunity to taste these organic products during their meals and Umbria Grill restaurant events.
All the dishes cooked by the chef are prepared with traditional recipes, using TodiCastle organic farm products, such as wine, olive oil, eggs, cheese, truffles, vegetables and fruit. Their are produced into the estate fields, olive groves and vineyards and also from the wild breeding of animals.
TodiCastle orchard provides a wide set of vegetables and fruits. The olive groves indeed produce excellent extra virgin olive oil, obtained through the “spremitura a freddo” procedure (cold pressed olives).
Wines are made from the grapes of TodiCastle and local winemakers, according to the traditional grape harvest local methods.
Besides this, TodiCastle Farm carries out the activity of breeding animals in the wild including cattles, sheeps, chianina cows, piglets, rabbits and chickens. Products getting from the livestock holdings, such as milk, cheese and eggs, are used as basic ingredients for the preparation of genuine and tasty dishes.
